This flavorful yet slightly fiery rub is mild enough for even the timid. So drag out that smoker and impress your guests at your next backyard get together.
2/3 cup (packed) light brown sugar
2/3 cup granulated sugar
1/2 cup paprika
1/4 cup seasoning salt
1/4 cup smoked salt
1/4 cup onion salt
1/4 cup celery salt
2 T ground black pepper
2 T chili powder or chipotle chili powder
2 tsp mustard powder
1 tsp poultry seasoning
1 tsp ground ginger
1/2 tsp ground allspice
1/2 tsp cayenne pepper
Add ingredients to a large jar, cover and shake it up. Yields two batches of rub on an eight to nine pound brisket. Store away from heat and light. Will keep several months.
